Mediterranean Turkey Sandwich Recipe

A turkey sandwich is healthy, right?  Well, maybe not.

Artisan breads and rich sauces can easily add 200 to 400 calories to your favorite sandwich.  If lunchtime calls for a trip to the deli, ask for 100% whole wheat (best) or multi-grain bread (still good) to increase your fiber intake. And instead of mayonnaise, try hummus and red peppers for a boost of Mediterranean flavor.

Buy roasted red pepper pre-sliced in a jar.
  • 2 tbsp hummus
  • 2 slices Sprouted Grain Bread or 100% Whole Wheat Bread
  • 4 oz low-sodium, low-fat turkey breast meat
  • 2 slices tomato
  • 2 slices roasted red pepper
  • 1/4 cup spinach leaves
  • pepper

instructions

Spread 1 tablespoon hummus on each slice of bread. Add turkey breast, tomatoes, roasted red pepper, spinach and pepper to taste.
