Healthy Wedding Cake Ideas from Anne Heap of Pink Cake Box

Just a few years ago Anne Heap was in the advertising industry. But in 2004 she decided to take a leap and pursue her passion for pastries which began in her mother’s kitchen at just six years old. After studying Pastry Arts at the French Culinary Institute in New York City, Anne opened her very own pastry store in New Jersey—Pink Cake Box. Since then, Anne and her team of nine have designed custom cakes for Rachel Ray’s 40th Birthday party, participated in Food Network Cake Challenges and have whipped up whimsical wedding cake designs that have been featured in many bridal magazines.

As an alternative to the traditional diet-disaster slice, Anne gave Bombshell Brides three healthy wedding cake ideas.

1. Downsize Portions

Large portions of rich wedding cakes pose unnecessary temptation. Especially after a full meal or wedding buffet, it doesn’t really take much to satisfy a sweet craving. “So to provide your wedding guests with a lighter cake option, serve cake in half-slices accompanied with fresh fruit to reduce calories and the cost,” says Anne.

While we can’t hide our love for sweet treats, wedding cakes topped with tons of frosting can be fat and calorie minefields. An alternative? Fruit. “Wedding cakes with fruit preserve fillings have tremendous flavor,” says Anne. “Try a low-fat wedding cake with fruit filling in between the layers instead of the traditional buttercream frosting. At the end of the night this option will be sure to satisfy your guests without racking up the calories!”

3. Choose Natural, Whole Ingredients

A Bombshell Bride’s diet should consist of 85 to 90 percent whole, natural ingredients like fruits, vegetables, whole grains and lean protein with little to no pesticides or hormones. That kind of healthy eating plan doesn’t have to be put on hold for celebrations. One of Anne’s favorite healthy wedding cake recipes includes whole wheat and brown sugar with organic cream cheese filling.
