Craving Crunchy? Try this Swedish Snack

For all you Bombshell Brides who crave crunchy, crispy treats in your day, we’d like to turn your attention to Sweden.  Besides their famous gummy fish candies and meatballs, this Scandinavian country has something else to offer your healthy appetite: crispbread.

Crispbread has been around for centuries and can be found next to the crackers in the grocery store.  It’s made from whole rye grain, including the outer husk, which means its packed with heart healthy, calorie-free fiber.   While we love that the hard, dry bread is also free of sugar and trans fats, some Bombshells say it’s also free of taste. Clearly they haven’t tried some of our favorite crispbread recipes courtesy of Wasa Crisp Breads.

wasa_breadWasa with Zucchini, Cherry Tomato, and Goat Cheese

Prep Time: 5 minutes

INGREDIENTS

¼ cup cherry or grape tomatoes, sliced
1 small zucchini, sliced thin lengthwise
2 tablespoons goat cheese
2 pieces WASA Hearty Rye (may substitute any WASA variety)

DIRECTIONS

  1. Saute zucchini (substitute eggplant or yellow squash if in season) in a non-stick skillet until soft and golden in color.
  2. Spread 1 tablespoon goat cheese on each crispbread.
  3. Top with sliced tomatoes and layer zucchini on top.
